Chicken with Mushroom, Pak Choi and Oyster Sauce

Serves 2 people

Ingredients

2-3 Chicken fillets (depending on how much Chicken you like)
1 pack of chestnut mushrooms
One pak choi
1 inch of ginger grated
2 cloves of garlic grated
2 Tablespoons of oyster sauce
1 Tablespoon of shaoxing
rice wine ( Dry Sherry is a substitute)
1 Tablespoon of sesame oil
A pinch of salt
Teaspoon of light and dark soy sauce
2 teaspoons of groundnut or vegetable oil

Prep: 

Like all wok dishes it doesn't take long to cook but takes longer to prepare , so in this recipe l chopped my Pak Choi in 1 inch bits and then l sliced my mushrooms and grated both the garlic and ginger. With the chicken l wanted it medium sized pieces but its all about what you want.

Marinating your chicken:

Add your seasame oil
Add your pinch of Salt and Oyster Sauce
Give it a good stir and leave for at least 20 mins , go and have a cup of tea and watch some tv.

Cooking part: 

1. What you want to do is cook the ginger and garlic to flavour the oil and any ingredients that come after.

2. Next add your chicken on top , keep stirring, making sure nothing is burning. Oh and add your shoaxing rice wine at this point

3. When your chicken looks white or that its nearly cooked , add your Sliced mushrooms. Add the rest of your seasoning , the soy sauces. Constantly Stirring.

4. Give it a good stir and when you know your mushrooms are nearly cooked , add your pak choi. Cook until wilted



You can serve this with anything but l think its nice with rice and noodles

Shaoxing wine from Asia market in Dublin ( You can order online)
Oyster Sauce from Asia Market in Dublin (you can order online) I think tescos has it too
Fish Sauce from aldi but can be found in most tescos
All fresh ingredients are found from Aldi or Lidl
